Grilled Pizza with Chicken Sausage, Onions and Sweet Peppers



Ingredients

2 link Casual Gourmet Chicken Sausage - Pesto, or other brand, halved lengthwise and thinly slice
1 small red onion(s), cut into thin slivers
1 small yellow pepper(s), cut into 1/4-inch-thick slices
1/2 cup pizza sauce, or tomato sauce
1 tsp dried oregano
3/4 cup part-skim mozzarella cheese, shredded
1 medium whole wheat tortilla(s)
Instructions

1. Preheat an outdoor grill (or a grill pan over medium-high heat). Place sausage, onion and pepper on grill in a grill basket; cook, flipping once, until sausage is golden and vegetables start to brown, about 4 to 6 minutes. Remove from grill and set aside until ready to use.

2. To prepare pizzas, place 2 tablespoons of sauce on each tortilla. Sprinkle each with 1/4 teaspoon of dried oregano and then top each with 1/4 of sausage-vegetable mixture; top each with 3 tablespoons of cheese.

3. Place pizzas on grill (or as many as will fit on grill pan at one time) and cook until edges begin to brown, about 3 to 5 minutes; rotate pizzas. Continue cooking until cheese is bubbly, about 2 to 4 minutes more. (If all 4 pizzas do not fit on grill pan at once, repeat with remaining ingredients.) Yields 1 pizza per serving.

Eggplant Rollatini with Tomato-Basil Sauce



Ingredients

3 sprays cooking spray
2 medium raw eggplant, tops and bottoms removed, sliced lengthwise into four 1/4-inch-thick long slices each
1 tsp olive oil
2 large garlic clove(s), sliced (about 2 Tbsp)
2 cup canned crushed tomatoes
2 Tbsp basil, fresh, torn
1 sprays cooking spray
1/4 cup minced onion
1 small zucchini, diced
1 large garlic clove(s), chopped (about 1 Tbsp)
1/2 cup part-skim ricotta cheese
1/2 cup parsley, fresh, chopped
2 Tbsp basil, fresh, chopped
3 Tbsp grated Parmesan cheese, divided
1 large egg(s)
1/4 tsp table salt
1/4 tsp black pepper, freshly ground
Instructions

1. Preheat oven to 450ºF. Coat a baking sheet with cooking spray.

2. Lay eggplant in a single layer on prepared baking sheet and lightly coat tops with cooking spray. Bake, flipping once, until golden brown, about 10 minutes per side. Remove from oven and set aside.

3. To make sauce, place oil in a medium saucepan over medium-high heat. Add sliced garlic; sauté until it begins to brown, about 1 to 2 minutes. Add crushed tomatoes; stir to combine and reduce heat to low. Add torn basil, stir to combine and simmer for 10 minutes. Cover, remove from heat and set aside.

4. To make filling, coat a large nonstick skillet with cooking spray; heat over medium-high heat. Add onion and zucchini; sauté until onion starts to brown, about 5 minutes. Stir in chopped garlic and cook 1 minute more; spoon onion mixture into a small bowl to cool. In another small bowl, combine ricotta, parsley, chopped basil, and 2 tablespoons of Parmesan; stir to combine. Add cooled onion mixture; stir to combine. Add egg, salt and pepper; stir to combine.

5. To make rollatini, reduce oven to 400ºF. Spoon 3 tablespoons of sauce in bottom of an 8- X 8-inch glass or nonstick metal baking dish and swirl to coat bottom with sauce. On a clean cutting board, place 1 slice of eggplant. Place 2 tablespoons of filling at the narrow end of eggplant and roll up; place in prepared baking dish, seam side-down. Repeat with remaining eggplant slices; arrange in a single layer in dish. Spoon remaining 1/2 cup of sauce and remaining tablespoon of Parmesan over eggplant. Bake until sauce bubbles, about 10 to 15 minutes. Yields 2 pieces of rollatini per serving.

Paessler Router Traffic Grapher

Paessler Router Traffic Grapher (PRTG) is a network monitoring and bandwidth use software for Microsoft Windows by Paessler AG.

With PRTG bandwidth usage of a network can be monitored and classified using the three most common bandwidth data acquisition methods:
SNMP: Reads traffic counters of network devices like switches, routers and servers
Packet Sniffer: Looks at all data packets travelling through a network using the promiscuous mode and analyzes the network packets to find out the IP addresses, protocols, etc. of the source and target machine
Netflow: Analyses Netflow protocol packets used mostly by Cisco routers

Using SNMP not only bandwidth usage but also many other network readings (e.g. CPU usages, disk usages, temperatures) can be monitored using SNMP OIDs.

The usage data is constantly recorded and the historic data can be analyzed e.g. with data tables for usage billing and graphs for trend analysis via a web server interface and in a Windows GUI.

PRTG was originally developed by Dirk Paessler when he discovered how much effort it is to install and configure MRTG on Microsoft Windows systems. A freeware version is available.

Network Management

Network management, typically applied to large-scale networks such as computer networks and telecommunications networks, refers to the maintenance and administration of such networks at the top level.

Network management is the execution of the set of functions required for controlling, planning, allocating, deploying, coordinating, and monitoring the resources of a network.

This includes performing functions such as initial network planning, frequency allocation, predetermined traffic routing to support load balancing, cryptographic key distribution authorization, configuration management, fault management, security management, performance management, bandwidth management, and accounting management.

A large number of protocols exist to support network and network device management. Common protocols include SNMP, CMIP, WBEM, Common Information Model, Transaction Language 1, Java Management Extensions - JMX, and netconf.
